Method: Whole cherries are sun dried to remove moisture content. Once dry, the coffee is hulled to remove outer layers resulting in earthy tones.
Paubrasil is a community coffee, produced by a farmers of the Cerrado Mineiro DO region. This coffee variety is named after Brazil’s national tree and exemplifies the consistent quality created by Brazil’s seasoned farmers. Paubrazil coffee offers balanced, smooth profiles, despite changing environmental conditions.
Paubrasil coffee is transparently certified as part of the Regiao Cerrado Mineiro Designation of Origin program. Coffees certified by this program are grown on farms in an area encompassing 55 municipalities. Paubrasil coffee offers a unique identity as a result of climate, soil, terrain, elevation, and shared production “know-how” by qualified producers.
Paubrasil’s contributing producers belong to one of nine cooperatives or six associations affiliated with the Cerrado Coffee Growers Federation- having signed a statement of good practices in accordance with Brazilian labor laws. Coffee storage follows an accredited warehouse, post-harvest protocol.
