Paola Trujillo grew up on her family’s farm, Patio Bonito, in Caldono, Cauca, where coffee has flourished for over four decades. While her father, Don Carlos Trujillo, has championed sustainable agricultural practices, Paola has taken on the role of refining fermentation and processing techniques. With precision and expertise, she ensures that each lot is a testament to her dedication to quality and innovation.

This rare Wush Wush variety was carefully handpicked at peak ripeness before undergoing a meticulous washed process. After an initial fermentation period, the cherries were pulped and gently washed to remove any remaining mucilage. The beans were then placed on raised beds to dry slowly and evenly, allowing the clarity of flavor to shine through while preserving the coffee’s bright and refined character.

Wush Wush, a rare Colombian varietal with Ethiopian heritage, reveals its delicate complexity in this washed lot. The cup is crisp and floral, with notes of elderflower and bright citrus, reminiscent of lemon zest. A subtle sweetness, like honey, lingers alongside hints of stone fruit, offering a clean and refined drinking experience. This coffee is a perfect harmony of its Ethiopian lineage and the rich Colombian terroir, resulting in a vibrant and beautifully structured profile.
